3 acorn squash
3 tablespoons butter, cut into small pieces
1 1/4 cups applesauce
3 tablespoons maple syrup
1 1/2 teaspoons ground ginger

Preheat oven to 350 degrees.

Cut each squash in half horizontally and scoop out the seeds and fibrous center. Arrange the squash in a shallow baking dish and pour in hot water halfway up the side of the dish.

Combine the rest of the ingredients and divide the mixture among the squash cavities.

Cover the dish with aluminum foil and bake until the squash is tender, about 1 hour.
