Old-Fashioned Chocolate Cake with Chocolate Frosting

1 3/4 cups all-purpose flour
1/2 cup cocoa powder, unsweetened Dutch-processed or 1 1/2 teaspoons cocoa powder, unsweetened Dutch-processed ,for dusting
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup natural unsweetened applesauce
3 tablespoons light corn syrup
1 cup sugar
3 large eggs, whites only, at room temperature
1 cup buttermilk
Light vegetable oil cooking spray
1 chocolate frosting, prepared recipe

Preheat the oven to 350 degrees.

Sift the flour, 1/2 cup of cocoa powder, baking soda, and salt together into a medium-size bowl. Set aside.

In a large bowl, combine the applesauce and corn syrup. Beat with an electric mixer set at medium speed until blended. While continuing to beat, gradually add the sugar. While beating at high speed, add the egg whites, one at a time. Continue to beat until the mixture is light and frothy.

Reduce the speed to medium and beat in half of the flour mixture, then 1/2 cup of the buttermilk, until incorporated. Beat in the rest of the flour, then the remaining 1/2 cup of the buttermilk, until incorporated. Beat in the rest of the flour, then the remaining 1/2cup of buttermilk. With a rubber spatula, scrape down the sides of the bowl.

Spray two 8-inch round, nonstick cake pans lightly with the vegetable oil spray and spread the oil evenly. Dust each with 3/4 teaspoon of the remaining cocoa powder. Divide the batter between the cake pans. Bake for 25 to 30 minutes, until a toothpick inserted into the center of each cake comes out clean.

Transfer the pans to a wire rack and cool for 15 minutes, then remove the cakes from the pans to cool completely.

When the cakes have cooled, frost with the chocolate frosting (see our Chocolate Frosting recipe). Let sit for 1 hour before serving.
