Southern Cornbread Stuffing

4 cups corn bread, crumbs
8 cups bread crumbs, lightly-packed, day-old
1 1/2 teaspoons salt
1/4 teaspoon pepper
poultry seasoning, (optional)
1 1/2 cups (or less) boiling water
1/2 cup butter, melted
1 cup onion, minced
1 cup celery, diced
4 eggs, beated
1 quart oysters, drained (optional)

Make cornbread (can be made a day ahead). Break cornbread into small pieces and mix with bread crumbs, salt, pepper and poultry seasoning. Add boiling water, melted butter, onion and celery. Mix well. Mix eggs in well. Add oysters, mixing lightly so as not to break them. Makes enough dressing to stuff 1 medium-large turkey. This is a moist stuffing.
